Chia Seed Pudding

Chia Seed Pudding is popping up all over the place and now can even be found in the yogurt isle of your grocery store. I've putting these in my smoothies for a long time now. However this is a perfect way to eat them for breakfast, a snack or even as a dessert.

My recommendation is try one first. If you like it then make your own. A bag of chia seeds costs on average about $15 where one in your local spot or grocery store is probably close to $5 for a single serving. You will definitely get bang for you buck with this recipe!

Chia seeds have a ton of health benefits. They are high in Omega-3 fatty acids, fiber, antioxidants and other minerals. They are also a great sub for eggs in your diet and are gluten-free. Incorporating Omega-3 fatty acids (many people take fish oil) are said to help reduce risk for heart disease, high cholesterol and even high blood pressure.

Shopping List:

chia seeds

almond milk

vanilla

cinnamon

any topping you'd like

1. In any sealable container, fill 1/4 with chia seeds and the rest with almond milk. Add 1 tbs vanilla (you can sub or add the same amount of agave or honey to add more sweetness) and 1 tsp cinnamon.

2. Shake and place in your refrigerator for 24 hours. It's best to stir one or two times as the seeds can clump together.

3. Spoon and eat. Add some blueberries, other fruit, nuts or granola on top!

Tip - the mixture should resemble pudding and the seeds will be soft.
