Cauliflower Pizza Dough

Who doesn't love pizza night?! Here's a great idea for those looking for gluten free or if you are simply wanting to add more veg to your meals.
Who would have thought....making pizza dough out of cauliflower? I thought the same but trust me, this give such incredible flavor to your pizza. It is amazing!
Shopping List:
1 small cauliflower
1/4 cup mozzarella - grated
4 tbs parmesan cheese - grated
1 large egg
S&P

Preheat your oven to 400 degrees.
Break the cauliflower into pieces and place into a food processor pulsing until the cauliflower resembles rice. Spread on a parchment lined baking sheet and bake at 400 degrees for 20 minutes turning the mixture half way through.
Once par cooked and cooled, place the cauliflower into a bowl with the cheese, egg and S&P. Combine together and form into a ball. Place back onto a parchment lined baking sheet, press down and form your pizza about a 1/2 inch thick. Bake until golden on the top about 15 to 20 minutes, flip and cook the other side until golden.
Buy or make a pizza sauce and add your favorite toppings! Bake another 5 minutes or so just until the cheese is melted and you are set.
Tip: pizza sauce is pretty easy to make - just reduce the liquid out of your marinara sauce to thicken.
Voila. A healthier pizza is ready to enjoy!
