Zucchini Sweet Potato Pancakes

Need a healthy quick snack? Try this and I promise you will love it! I'm constantly trying to find ways of using up anything in the fridge before they go bad. This was an idea that just happened to be absolutely fantastic.
Do you like a potato pancake or latkes? This is a bit healthier with just a hint of sweetness.

Shopping List:
2 zucchinis - grated
1 sweet potato - peels and grated
1 egg - beaten
1/2 cup panko bread crumps
1 tsp garlic powder
2 tbs coconut oil or EVOO
1. Grate the zucchini and sweet potato. In a bowl mix with an egg and the bread crumbs. Add the garlic powder and S&P. Toss together.
2. Form into small balls. I used an ice cream scoop.
3. Heat oil in a skillet on medium-high. Add two to three scoops to the skillet and take a spatchula and flatten. Cook for about 4 minutes on each side until brown and a bit crispy.
4. Cook the remaining scoops. Add a bit more oil where needed.
5. Eat with a bit of sour cream or greek yogurt.
