Salt Block Peanut Brittle

I'm a sucker for a new kitchen toy. I got inspired by an episode of Kelsey's Essentials where she cooked an entire set of recipes on a salt block.
Not thinking anything of it, I popped into Williams Sonoma this weekend during their Friends and Family to see a salt block staring right at me when I walked in like a beacon saying "buy me". Problem is everything in WS says buy me.
So here's a fun recipe using a salt block. Want something quick to WOW at a dinner party or when having company? Use this little tool for an aw factor. And if you don't feel like cooking on it, use it for your cheese plate!
Shopping List:
1 cup sugar
1 tbs bourbon vanilla
2 tbs corn syrup
1/8 tsp baking soda
1/2 cup unsalted peanuts - chopped
Recipe:
1. Place your salt block in the freezer for about 2 hours before you are ready to use.
2. In a nonstick sauce pan, heat the sugar and vanilla over medium high heat. Be observant. Once the sugar caramelizes you will need to work fast.
3. Once caramelized, add the corn syrup and baking soda. Whisk fast. Add peanuts.
4. Spread over your chilled salt block and let cool for a few minutes. Cut on a cutting board (not on your salt block) and break into pieces.
