Left Over Dilemma

Here are a few ideas on how to whip up something great from left overs you may have hiding in your fridge.

Have some left over pasta? Throw it into a frittata for a great breakfast!

Here I used some left over penne ala vodka. I caramelized an onion, added a garlic clove and the pasta to heat up. Combined 2 whole eggs with a cup of egg whites, mixed in some parmesan cheese, and added it to the skillet. Heat it on the stovetop until the eggs cook along the edges of the pan then toss in a preheated 375 degree oven for about 20 to 30 minutes until cooked through.

And need a way to use up those veggies you have in the fridge before they go bad? Here's a breakfast recipe that won't dissapoint! This is one of my favorite things to make in the morning.

The must haves are an onion, sweet potato and eggs. Other than that - throw in whatever veggies you have!

Chopped all your veggies the same size to help with cooking. Sear and cook the sweet potato first until it caramlizes a bit. Add onion and garlic, then any hard veggie first. Add your soft veggies. Have some spinach or kale? Why not. Throw that in as well. S&P and if you have some cheese add that. Top with a fried or poached egg or two and viola! Healthy and delicious.
