As promised, here is another way to use ramps! And this is such a healthy and easy breakfast, brunch, or snack recipe. Talk about flavor.
Shopping List:
1 carton egg whites
3 eggs
2 zucchinis - peeled and diced
3 ramps - cleaned and diced
1 cup sauteed leeks
1 16oz can diced tomatoes with mild green chilis
6 pieces of lowfat Laughing Cow swiss cheese
1. Sautee the zuccini and ramps. Add a can of drained diced tomatoes with mild green chilis. Mix in the sauteed leeks. Salt and pepper.
2. In bowl, mix 3 whole eggs in with the carton of egg whites. Mix in the cheese. Salt and pepper. Add to the cast iron skillet with vegetables.
3. Cook on the stove without touching until the eggs firm up around the pan. Cook in a pre-heated 350 degree oven for 30 minutes.
