Amped up Pulled Pork Sandwich

Talk about a boost of flavor in this slow cooked pulled pork sandwich! I promise when you try it this way, you'll never make a boring regular old pull pork sandwich again. Wowza!

Shopping List:

1 pork roast

1 onion - sliced

5 cloves of garlic - whole

1 cup water

1 cup BBQ sauce

buns

1 bag of broccoli slaw

3 tbs greek yogurt

1 lime - juiced

1 chipotle in adobo - finely chopped

Rub:

2 tbs of brown sugar

1 tsp cayenne pepper

1 tsp ground mustard

1 tsb garlic powder

salt and pepper

Pulled Pork:

1. In a slow cooker, layer the sliced onion and garlic cloves on the bottom. Place your rubbed pork tenderloin on top and add the cup of water. Cover and let cook overnight or all day. Be prepared if you cook it all night to wake up at some point to incredible smells wafting from your kitchen and an uncontrollable urge to eat.

2. When the pork is ready to shred, pull it out of the slow cooker and place it in a dish. Strain the onion and garlic out of the liquid and whiz it up in a mini food processor or blender. Shred up the pork, add back in the pureed onion and garlic, and a cup of your favorite BBQ sauce.

3. To make the chipotle slaw, open a bag of broccoli slaw and place in a bowl. Mix in the greek yogurt, the juice of 1 lime, the chipotle in adobo and a little salt. Combine it all together.

Now it's time to toast up your buns and assemble your sandwich! I promise you, this one won't disappoint.

Tip: You can make your own BBQ sauce but I found one that hits the spot every time - Sweet Baby Rays.

Tip: And if you like it spicier, add another chipotle in adobo. Those things have some heat!

Tip: I've never used the full can of chipotle in adobo. Why throw the rest out? Simple put the extra into a sandwich bag and freeze. Anytime you want to use a litte just grab a knife and cut off a slice then dice. It lasts and lasts.
