Avocado Toast

So it's time for a quick snack huh? Here's one that's become a favorite I eat time and time again.
Growing up in California, my grandmother had the largest avocado tree in her back yard. Every other year the tree would produce ridiculous amounts of avocados. I can remember having bags and bags that needed to be eaten up and my family would find many ways to use them. How many times can you eat guacamole? Ok, for those aholics I understand - we can eat guacamole every day. I know.
My dad's favorite snack is a simple piece of toast with mayonnaise and mashed up avocado (first picture above). I sprinkled a bit of paprika on top. I used to think this was gross. Now that I'm an adult I find this completely nostalgic and absolutely love it. It's a bit of comfort in a snack.
To make it a little heartier simply top it with a poached egg! Talk about ewwy gewwy goodness when that yolk drips all over and you use the toast to slather up all that creamy yolk.
And poaching an egg or two isn't difficult! Do it once and you'll realize it was nothing to be scared of. Simply use a sauce pan and bring a few inches of water to a boil. Pour in 2 cap fulls of vinegar. Using a spoon create a whirlpool by quickly stirring the spoon in the water. Crack in an egg or two as quickly as you can while the water is circling around. The vinegar will help the egg to wrap around itself. Let the egg(s) cook about 3 minutes and then with a slotted spoon pull each out. Place on top of your avocado toast and de-lish - snack away!
Tip: If you haven't poached an egg before I'd recommend doing one at a time to start. Once you find your rhythm you take a more adventurous approach and throw in 2!
