Chewy Oatmeal Raisin Cookies

Here's the problem with these, you will eat them all very quickly!
Shopping List:
1 cup butter (2 sticks) - room temp
2 eggs - room temp
2 cups dark brown sugar
2 cups flour
1 tbsp baking soda
1 tbsp ground cinnamon
1 tsp ground nutmeg
1 tsp ground ginger
1 tsp salt
1 cup raisins
3 cups quick cooking oats
2 tbsp bourbon vanilla
1. In a mixer, cream the butter and brown sugar. Add each egg individually and whip together. Add the bourbon vanilla.
2. In a bowl, mix together the flour, baking soda, spices and salt. Add the dry ingredients slowly to the wet.
3. Add the raisins and mix together. Add the oats.
4. To get the perfect sized dough ball, the easiest thing to use is an ice cream scooper (about 2 spoon fulls of batter). Spray your sheet trays with a bit of cooking spray and place a scoop of the dough on each tray a few inches apart from one another.
5. Cook for about 15 minutes in a 375 degree oven.
Tip: The dark brown sugar adds a nice carmelized flavor to these. You can substitue with 1 cup light brown sugar and 1 cup regular sugar if you aren't a huge maple fan. But trust me, the combo here makes these hard to only eat one and walk away!
